Stuffed Mushrooms

Cheesy, garlicky stuffed mushrooms that look fancy but are easy enough to make with kids. Perfect for potlucks, parties, or family snacking.

Ingredients
  

  • 1lb Large white button mushrooms About 20 pieces
  • 1–2 tablespoon Olive oil For brushing For brushing
  • To taste Salt and pepper For seasoning
  • 8oz Cream cheese Softened Softened
  • ½ cup Breadcrumbs Regular or panko
  • 2 Garlic cloves Minced
  • ¼ cup Parmesan cheese Grated
  • 2 tablespoon Fresh parsley Chopped
  • 2 tablespoon Green onions/chives Chopped
  • Optional Add-ins
  • ½ cup Cheddar, mozzarella, or other cheese Shredded
  • ½ cup Cooked sausage Crumbled
  • ¼ cup Bacon bits
  • ½ cup Spinach Chopped

Equipment

  • 1 Small spoon (For scooping mushroom stems)
  • 1 Baking sheet (With sides to catch drips)
  • 1 Mixing bowl (For preparing the filling)
  • 1 Sharp knife (For chopping stems, herbs, etc.)
  • Measuring cups & spoons (For accurate ingredient amounts)

Method
 

  1. Remove stems, scrape out gills, pat dry, brush with olive oil, and season with salt & pepper.
  2. Flip mushrooms upside down on paper towels for 10 minutes to release moisture. Lightly salt to draw out more water.
  3. Chop stems, sauté with garlic until soft, then let cool. Mix with softened cream cheese, breadcrumbs, parmesan, and herbs. Season.

  4. Assemble Spoon filling into mushroom caps (don’t overstuff). Sprinkle with extra cheese if desired.

  5. Place on baking sheet. Bake at 375°F for ~20 minutes until golden brown. Let cool 5 minutes before serving.
