Ingredients
  

  • 2 boneless skinless chicken breasts (about 6 oz each, halved into cutlets for even cooking)
  • 2 ½ tablespoons extra virgin olive oil divided, for rubbing and skillet cooking
  • 1 ½ teaspoons Italian seasoning dry mix of herbs like oregano, basil, thyme
  • 1 ½ teaspoons garlic powder for bold flavor
  • 1 ½ teaspoons onion powder enhances savory taste
  • 1 teaspoon paprika for color and mild smokiness
  • 1 teaspoon fine sea salt adjust to taste
  • ½ teaspoon black pepper freshly ground preferred

Method
 

  1. Slice the chicken breasts in half horizontally to make two thinner cutlets. prep
  2. Combine Italian seasoning, garlic powder, onion powder, paprika, salt, and black pepper in a small bowl. mix
  3. Drizzle ½ tablespoon olive oil over the chicken cutlets and rub evenly on both sides. Sprinkle the seasoning mixture on both sides and gently press to adhere. mix
  4. Heat a 12-inch skillet over medium heat and add 2 tablespoons of olive oil. Once hot, place chicken in the skillet and cook 4–5 minutes per side. Reduce heat to medium-low if skillet becomes too hot to prevent burning. prep
  5. Check the thickest part of the chicken with a digital meat thermometer; it should reach 165°F. finish
  6. Remove chicken from the skillet and let rest for 3–5 minutes before serving to lock in juices. finish
