Method
 

  1. Whisk the whole eggs and egg yolks together in a large bowl until fully combined. mix
  2. Warm the orange juice, cream, sugar, and salt in a saucepan over medium heat, stirring occasionally, until the sugar dissolves and the mixture feels warm. mix
  3. Slowly stream about one-quarter of the warm liquid into the eggs while whisking constantly to temper them. mix
  4. Return the egg mixture to the saucepan and cook gently until thickened, then strain to remove any lumps and stir in the vanilla. mix
  5. Let the custard cool close to room temperature or refrigerate until ready to use. prep
