  • 1 rotisserie chicken shredded and diced, about 4 cups
  • 1 ½ cups strawberries diced, 4-5 large strawberries
  • 1 cup red onion diced
  • ¼ cup walnuts chopped
  • 1 cup celery diced
  • ¾ cup mayonnaise preferably full-fat for creaminess
  • 1 tablespoon fresh basil minced
  • 1 tablespoon white vinegar for tanginess
  • 1 teaspoon salt to taste
  • 1 teaspoon black pepper freshly cracked, for flavor
  • 1 tablespoon balsamic glaze for drizzling

Method
 

  1. Shred and dice the chicken meat, removing both white and dark meat. This will yield about 4 cups of shredded chicken.

  4. Add the shredded chicken, diced strawberries, red onion, walnuts, and celery to a large mixing bowl. Set aside.
