Ingredients
  

  • 2 ribeye steaks about 1–1½ inches thick, can substitute with New York strip
  • 1 tablespoon olive oil for searing
  • 1 tablespoon unsalted butter for basting steaks
  • 1 teaspoon kosher salt for seasoning
  • 2 rosemary sprigs fresh, for aromatic basting
  • 4 garlic cloves minced (for creamy sauce)
  • 1 tablespoon unsalted butter for garlic sauté
  • ½ cup heavy cream for rich sauce
  • ½ cup beef broth for deglazing pan
  • 2 tablespoons Parmesan cheese grated (for creaminess)
  • ½ teaspoon kosher salt adjust to taste in sauce
  • 1 teaspoon Dijon mustard for subtle tang
  • 1 splash white wine optional, for depth of flavor

Method
 

  1. Remove the steaks from the refrigerator 30 minutes before cooking to allow them to reach room temperature. prep
  2. Pat the steaks dry with paper towels and season both sides generously with kosher salt. prep
  3. Heat the large skillet over medium-high heat and add olive oil until it shimmers. prep
  4. Place the steaks in the skillet and sear for 3–4 minutes per side for medium-rare, adjusting time for preferred doneness. cook
  5. During the last minute of cooking, add butter and rosemary to the skillet and spoon the melted butter over the steaks to baste. cook
  6. Transfer the steaks to a plate or cutting board, tent loosely with foil, and allow them to rest for 5 minutes. finish
  7. Reduce the heat to medium. Add butter and minced garlic to the same skillet and cook for 30 seconds until fragrant. prep
  8. Pour in the beef broth and scrape up browned bits from the skillet to deglaze the pan. mix
  9. Stir in heavy cream and Parmesan cheese, cooking 2–3 minutes until the sauce is smooth and slightly thickened. Season with salt as needed. mix
  10. Return the steaks with any accumulated juices to the skillet or pour the sauce over the steaks when serving. assemble
