  • 6 cups Baby spinach - Washed and dried thoroughly
  • 1.5 cups Strawberries - Hulled and sliced
  • cup Feta cheese - Crumbled
  • cup Pecans or walnuts - Toasted
  • ¼ cup Red onion - Very thinly sliced optional soak
Dressing
  • 3 tablespoon Olive oil - Extra virgin preferred
  • 2 tablespoon Balsamic vinegar - Or white balsamic
  • 1.5 tablespoon Honey - More if you like it sweeter
  • 1 teaspoon Dijon mustard - Optional but recommended
  • Salt and pepper - To taste

Method
 

  1. Wash spinach, slice strawberries and onion (soak if desired), crumble feta, toast nuts.
