Ingredients
  

  • 1 cup 210 g cottage cheese (Use full-fat for a richer flavor)
  • 1 tbsp + 2 125 g all-purpose flour (Can substitute with gluten-free flour)
  • 3 teaspoon baking powder Leavening agent to help the dough rise
  • ½ teaspoon salt For seasoning
  • 1 tablespoon olive oil For moisture and flavor
  • 2 oz 56.7 g baby spinach, finely chopped (Fresh spinach works best)
  • ½ cup 56 g shredded mozzarella cheese (Provides a mild, creamy texture)
  • 1 egg lightly beaten (For egg wash to give a golden finish)

Method
 

  1. Preheat the oven to 375℉ (190℃). Line a large baking sheet with parchment paper. prep
  2. Place the cottage cheese into a mini food processor and pulse until smooth. prep
  3. In a large mixing bowl, combine the smooth cottage cheese, flour, baking powder, salt, olive oil, chopped spinach, and shredded mozzarella. Stir the mixture until fully incorporated. mix
  4. Use your hands to shape the dough into a 6-inch log. Divide the dough into 6 equal pieces. prep
  5. Flatten each dough piece into a circle and create a hole in the center with your finger. Assemble
  6. Transfer the shaped dough onto the prepared baking sheet. Brush the tops with the lightly beaten egg. Assemble
  7. Bake for 22-25 minutes, or until golden brown on top. Bake
  8. Remove the flagels from the oven and transfer them to a wire rack to cool completely. finish
