Ingredients

  • 4 Bone-in rib pork chops 1 inch thick (patted dry for proper sear, ~2.5–3 lbs total)
  • 2 tablespoons Olive oil for searing chops
  • 3 tablespoons Butter unsalted, for sautéing onions
  • 1 Yellow onion halved and thinly sliced (for gravy)
  • 2 Garlic cloves chopped (for flavor)
  • ¼ cup All-purpose flour to thicken gravy
  • 1 ½ cups Chicken broth low sodium preferred
  • ½ cup Heavy cream for rich, creamy gravy

Method
 

  1. Combine kosher salt, black pepper, onion powder, poultry seasoning, and smoked paprika in a small bowl. prep
  2. Add pork chops and sear for 4–5 minutes per side until golden brown. prep
  3. Reduce heat to medium, add butter and sliced onions to the skillet, and cook for 5–7 minutes until softened, stirring to scrape up browned bits. prep
  4. Add chopped garlic to the onions and cook for 1 minute until fragrant. prep
  5. Sprinkle flour over onions and garlic and stir for 1 minute to cook out raw flour taste. mix
  6. Slowly pour in chicken broth while stirring constantly, cooking 8–10 minutes until slightly thickened. mix
  7. Return pork chops to skillet, spooning gravy over them, and cook 3–4 minutes until internal temperature reaches 145°F (63°C). bake
