Ingredients
  

For the Mofongo:
  • 3 Green plantains - Peeled and sliced into 1-inch rounds
  • 1 head Garlic - Peeled and mincedfor the mofongo
  • 1 cup Chicharrones - Crushed pork cracklings
  • 0.5 cup Chicken broth - Add as needed while mashing
  • tablespoon Olive oil - For frying or use vegetable oil
  • Salt - To taste
For the Shrimp and Sauce:
  • 1 lb Large shrimp - Peeled and deveined
  • 4 cloves Garlic - Minced for the shrimp
  • 0.25 cup White wine - Can substitute chicken broth + lemon juice
  • 0.5 cup Heavy cream - Or use half-and-half or coconut cream
  • 2 tablespoon Butter - For cooking shrimp
  • 0.25 cup Chicken broth - For the sauce
  • 2 tablespoon Lime juice - Freshly squeezed
  • 2 tablespoon Cilantro - Chopped for garnish

Equipment

  • 1 Deep skillet or pot (For frying the plantains)
  • 1 Mortar and pestle (Traditional pilón for mashing)
  • 1 Large bowl (If no mortar is available)
  • 1 Meat mallet or glass (For mashing, if no pilón)
  • 1 Skillet (For cooking the shrimp)
  • 1 Spider strainer/tongs (For removing plantains from oil)
  • 1 Paper towels (For draining fried plantains)

Method
 

  1. Peel and slice green plantains, then soak them in salted water.

  2. Deep fry the plantain slices until golden and crispy on the outside.

  3. Mash fried plantains with garlic, chicharrones, and broth until chunky.
