Ingredients
  

  • 1 pound shrimp peeled, deveined, large 16–20 count for best texture
  • 2 bell peppers thinly sliced, use red and yellow for color
  • 1 medium red onion thinly sliced for even cooking
  • 3 tablespoons olive oil extra virgin preferred
  • 1 ½ teaspoons garlic powder or 2 cloves minced fresh garlic
  • 1 ½ teaspoons chili powder adjust for spice preference
  • 1 ½ teaspoons ground cumin freshly ground if possible
  • 1 ½ teaspoons paprika smoked paprika optional
  • 1 ½ teaspoons onion powder for extra flavor
  • 2 teaspoons kosher salt or to taste
  • 1 lime cut into wedges for serving
  • ½ cup cilantro freshly chopped for garnish
  • 4 –6 flour tortillas warmed, for serving

Method
 

  1. Preheat your oven to 425°F and line a sheet pan with parchment paper. prep
  2. In a large bowl, combine shrimp, sliced bell peppers, and red onion. Drizzle with olive oil and sprinkle garlic powder, chili powder, cumin, paprika, onion powder, and salt. Toss until everything is fully coated. mix
  3. Arrange the shrimp and vegetables in a single layer on the prepared sheet pan. assemble
  4. Roast in the oven for 12–13 minutes, or until shrimp are pink and opaque and vegetables have tender, lightly charred edges. bake
  5. Remove the sheet pan and squeeze fresh lime juice over the shrimp and vegetables. Sprinkle with chopped cilantro. finish
  6. Serve immediately with warm flour tortillas and any preferred fajita toppings. finish
  7. Preheat the air fryer to 400°F for 2 minutes. Add shrimp and veggies to the basket and cook 8–9 minutes until shrimp are cooked through. Remove, squeeze lime, sprinkle cilantro, and serve with tortillas. prep / bake
