Ingredients
  

  • 6 large eggs fresh, room temperature
  • 6 hot dog sausages fully cooked, standard size
  • 6 tablespoons sweet bean sauce or hoisin, smooth consistency
  • 2 cups lettuce washed, roughly chopped
  • 6 slices cheddar cheese mild, sliced thin
  • 12 bacon slices smoked, raw
  • 6 wonton cracker squares prepared from wrappers, fried
  • 1 cup fresh coriander roughly chopped, stems removed
  • tablespoons black sesame seeds toasted if possible
  • 110 g all-purpose flour plain, sifted
  • 330 ml water room temperature
  • ¾ teaspoon salt fine sea salt
  • Cooking oil neutral flavor, for frying

Method
 

  1. Lightly dampen one side of a wonton wrapper, press a second wrapper on top, then cut the pair in half. Heat oil to frying temperature and cook until golden, then drain on paper towels. prep
  2. Cook the bacon in a skillet, turning as needed, until browned and crisp, then set aside. prep
  3. Using the same pan, warm the hot dog sausages over medium heat until heated through. prep
  4. Combine flour, salt, and water in a bowl and whisk until smooth and pourable. mix
  5. Grease a heated pan generously, pour in one portion of batter, and cook until the surface sets. prep
  6. Crack an egg onto the crepe, spread it thinly across the surface, and scatter sesame seeds over the top. assemble
  7. Flip the crepe carefully once the egg firms up and cooks through. prep
  8. Place coriander in the center, add half a cheese slice, and allow it to melt before removing from the pan. assemble
  9. Top with bacon, sausage, fried cracker, and lettuce before folding the crepe closed into a wrap. assemble
