Ingredients
  

  • 6 slices bacon use thick-cut for better crispiness
  • 1 pound maple breakfast sausage for a sweet and savory flavor
  • 9 large eggs for fluffier scrambled eggs
  • ¼ cup milk whole milk recommended for creaminess
  • Salt and pepper to taste
  • 1 ⅛ cups shredded Colby Jack cheese mild cheese for a balanced flavor
  • 8 croissants sliced open for easy assembly
  • Chives for garnish minced, adds fresh flavor
  • 2 tablespoons mayonnaise creamy texture for the sauce
  • 2 tablespoons mustard or Dijon mustard adds a tangy kick
  • 2 tablespoons maple syrup adds sweetness to the sauce

Method
 

  1. Preheat the oven to 420°F and line a baking sheet with foil. prep
  2. Place the bacon on the lined baking sheet and bake for 10-15 minutes until crisp, depending on thickness. bake
  3. Remove the bacon and place it on a paper towel-lined plate to drain. prep
  4. Shape the sausage into 8 evenly sized rectangles that will fit on the croissants. prep
  5. Heat a skillet over medium heat and cook the sausage for 7-8 minutes per side, until fully cooked. cook
  6. Whisk together the eggs, milk, salt, pepper, and cheese in a bowl, then set aside in the fridge. prep
  7. Once the sausages are done, remove them from the skillet and cover with a lid to keep warm. prep
  8. Turn the oven to broil. Arrange the croissants on a baking sheet and place under the broiler until toasted, then remove. bake
  9. Heat a skillet over medium-high and spray with cooking spray. Add the eggs and cook, stirring frequently with a rubber spatula, until fully scrambled. Remove from heat. cook
  10. In a small bowl, whisk together the mayonnaise, mustard, and maple syrup. mix
  11. Spread the sauce onto each half of the toasted croissants. Assemble the sandwiches with sausage, bacon, eggs, and a sprinkle of chives. assemble
