Sausage and Kale Casserole

This creamy Turkey Sausage and Kale Casserole is a hearty, family-friendly meal filled with comforting fall flavors!

Ingredients
  

  • Nonstick cooking spray for greasing the casserole dish
  • 8 oz. rigatoni pasta uncooked, or your preferred pasta, check cooking directions
  • 1 tablespoon vegetable oil for browning the sausage
  • 13 oz. turkey smoked sausage sliced
  • 8 oz. white mushrooms cleaned and sliced, about 227g
  • 1 onion small diced, about 220g or 2 cups
  • 2 tablespoon butter for sautéing
  • ¼ cup all-purpose flour 35g
  • 2 cups milk whole milk recommended
  • 1 teaspoon salt to taste
  • ½ teaspoon black pepper freshly cracked
  • 1 teaspoon garlic powder for seasoning
  • 1 teaspoon Italian seasoning adds flavor depth
  • teaspoon nutmeg optional, for a warm note
  • 1 bunch fresh kale washed, stemmed, and chopped, about 130g; frozen kale is an option
  • 4 oz. cream cheese for creaminess
  • cups mozzarella cheese shredded, about 150g

Method
 

  1. Preheat your oven to 375°F (190°C). Grease a 9x13 casserole dish with nonstick cooking spray. prep
  2. Bring a medium pot of water to a boil for the pasta. Once boiling, add the pasta and cook for about 10 minutes, or until al dente. Drain the pasta and set aside. prep
  3. In a medium skillet, heat the vegetable oil over medium heat. Add the sliced turkey sausage and cook for about 10 minutes, flipping halfway through until browned. Remove from the skillet and set aside. prep
  4. In the same skillet, add the diced onions and sliced mushrooms. Sauté for about 5 minutes, stirring occasionally, until softened. prep
  5. Melt butter in the skillet with the mushrooms and onions, then stir in the flour. Cook for 1 minute to create a roux. mix
  6. Slowly add the milk while stirring to avoid lumps. Add salt, pepper, garlic powder, Italian seasoning, and nutmeg. Continue cooking for 2 minutes, until the sauce thickens. mix
  7. Add the chopped kale and cream cheese to the skillet. Stir until the kale wilts and the cream cheese melts into the sauce, about 2 minutes. mix
  8. Add the browned sausage and any drippings back into the skillet. Stir to combine. fold
  9. Add the cooked pasta to a large bowl, then pour the sausage and vegetable mixture into the bowl. Stir until everything is evenly combined. fold
  10. Transfer the entire mixture into the prepared casserole dish and spread evenly. Assemble
  11. Top the casserole with shredded mozzarella cheese, spreading it evenly over the surface. bake
  12. Bake the casserole in the preheated oven for 25-30 minutes, or until the top is golden and bubbly. bake
  13. Remove from the oven and allow to cool slightly before serving. finish
