  • 2 cups shredded rotisserie chicken cooked and shredded chicken from a rotisserie bird
  • 1 cup sour cream creamy and tangy base
  • 1-½ cups salsa verde divided: ¾ cup for the chicken mixture, ¾ cup for the layers
  • 8 corn tortillas 6 inches, cut into quarters
  • 2 cups chopped tomatoes fresh and juicy
  • ¼ cup minced fresh cilantro for garnish and flavor
  • 2 cups shredded Monterey Jack cheese mild and melty cheese
  • Optional toppings: Additional salsa verde avocado slices, thinly sliced green onions, fresh cilantro leaves (for extra freshness and flavor)

Method
 

  1. In a small bowl, mix together the shredded chicken, sour cream, and ¾ cup of salsa verde. prep
  2. Spread ¼ cup of salsa verde evenly across the bottom of a greased 8-inch square baking dish. prep
  3. Layer half of the tortilla quarters in the dish, followed by half of the chicken mixture, half of the chopped tomatoes, and half of the shredded cheese. assemble
  4. Repeat the layering process with the remaining tortillas, chicken mixture, tomatoes, and cheese. assemble
  5. Bake uncovered at 400°F for 20-25 minutes, or until the casserole is bubbly and the cheese is melted. bake
  6. Remove from the oven and serve with the remaining salsa verde and your choice of toppings like avocado, green onions, or cilantro. finish
