  • ¾ cup all-purpose flour Helps to thicken the porridge

Method
 

  1. Heat the milk in a large heavy-bottomed saucepan over medium heat. Use a kitchen thermometer to ensure the milk reaches 195°F. Stir almost constantly to avoid burning. prep
  2. While the milk heats, whisk together the flour, sugar, and salt in a small bowl. Set aside. prep
  3. Melt the butter in a small saucepan over medium heat. Once melted, remove from heat and set aside until the milk reaches 195°F. prep
  4. Once the milk has reached 195°F, stir the flour mixture into the melted butter to form a thick paste. Gradually add this paste into the hot milk, stirring continuously until the mixture begins to boil. Then reduce heat to low and cook for an additional 5 minutes, stirring often.
