  • 4 ½ cups whole milk or full-fat coconut milk For a creamy texture
  • ¾ cup short grain rice Best for a soft, creamy pudding
  • ¼ cup maple syrup or honey Sweetens the pudding

  • ½ cup raisins For sweetness and texture
  • 1 teaspoon vanilla extract For flavor

Method
 

  1. In a large saucepan, combine the milk, rice, maple syrup, and salt. Bring to a simmer over medium-high heat, stirring frequently. prep
  2. Once simmering, reduce the heat to low, partially cover with a lid, and cook for 25 to 30 minutes, stirring often to prevent the rice from sticking. The rice should be tender. cook
  3. Remove from heat and stir in the raisins, vanilla extract, and cinnamon. mix
