Ingredients
  

  • Vinaigrette:
  • ¼ cup neutral salad oil canola, peanut, or avocado oil
  • ¼ cup rice vinegar adds tangy flavor
  • 2 tablespoon honey for sweetness
  • 2 teaspoon soy sauce for saltiness and depth
  • 1 teaspoon ground ginger adds warmth and spice
  • ¼ teaspoon garlic powder mild garlic flavor
  • 1 teaspoon toasted sesame oil adds nuttiness
  • Salad:
  • 6 cups shredded cabbage use Napa, green, or red cabbage for color and crunch
  • 1 carrot shredded for a fresh, sweet flavor
  • 4 green onions sliced for added freshness
  • 1 3 oz. package instant ramen used dry for crunch, discard seasoning packet
  • ¼ cup sliced almonds for extra crunch
  • 2 cups shredded rotisserie chicken pre-cooked for convenience

Method
 

  1. Whisk together the salad oil, rice vinegar, honey, soy sauce, ginger, garlic powder, and toasted sesame oil in a small bowl. Set aside the dressing.
  2. Shred the cabbage as finely as possible, shred the carrot, and slice the green onions. Crush the ramen noodles, discarding the seasoning packet.
  3. In a large bowl, combine the cabbage, carrot, green onion, sliced almonds, crushed ramen noodles, and shredded rotisserie chicken.
  4. Pour the dressing over the salad ingredients and toss everything until well combined and coated in the dressing.
