Ingredients
  

  • 1 ½ cups all-purpose flour Use Bob's Red Mill 1:1 gluten-free flour for a gluten-free option
  • 2 teaspoon pumpkin pie spice For the signature fall flavor

  • 1 teaspoon baking powder For lift
  • ½ teaspoon baking soda To help the waffles rise
  • 2 large eggs Large eggs help bind the ingredients
  • 2 tablespoon maple syrup For a touch of sweetness
  • 3 tablespoon melted unsalted butter Adds crispiness and flavor
  • 1 teaspoon vanilla extract For richness and aroma
  • ½ teaspoon fine sea salt Balances the sweetness
  • ½ cup pumpkin puree Not pumpkin pie filling
  • 1 ½ cups buttermilk Makes the waffles light and fluffy
  • Avocado oil For brushing the waffle maker plates

Method
 

  1. In a medium bowl, whisk together the flour, pumpkin pie spice, cinnamon, baking powder, and baking soda. prep
  2. In a large bowl, whisk together the eggs, maple syrup, melted butter, vanilla extract, and fine sea salt. mix
  3. Gradually incorporate the dry ingredients in two batches and whisk until just combined. Be careful not to overmix; it's okay if there are a few small lumps. mix
  4. Preheat the waffle maker, then brush or spray the plates with avocado oil. Spoon batter into the waffle maker, about ¼ cup per waffle, and avoid overfilling. Cook the waffles for 4-5 minutes or according to your waffle maker's instructions. bake
  5. Transfer the waffles to a wire rack or preheated oven to keep warm. Repeat with the remaining batter. finish
