  • 2 sprigs - Fresh thyme
  • 2 tablespoon Olive oil - For searing
  • 2 tablespoon Butter - For flavor + basting
  • Sea salt - To taste
  • Black pepper - To taste
  • 1 tablespoon Honey - Optional for extra glaze
  • Dijon mustard - Optional flavor variation

Method
 

  1. Pat pork chops dry with paper towels. Season both sides with salt and pepper. Let rest at room temperature for 20–30 minutes. Preheat oven to 400°F.

  2. Side Heat a skillet over medium-high heat. Add olive oil. Once hot, place pork chops in the pan and sear for 3–4 minutes without moving them.
