  • 3 cups Cooked shredded chicken - About 1.5 lbs; rotisserie works well
  • 2 cans Cream of chicken soup 10.5 oz each - Low-fat or regular
  • 1 cup Sour cream - Greek yogurt can be used instead
  • 2 tablespoon Poppy seeds
  • 1 tablespoon Lemon juice - Adds brightness
  • ½ teaspoon Garlic powder
  • ½ teaspoon Black pepper
  • 2 cups Ritz crackers crushed - About 1 sleeve, or use gluten-free crackers
  • ½ cup Butter melted - For topping
  • ½ cup Grated Parmesan - Optional for extra flavor
  • 1 teaspoon Dried parsley - Optional
  • ½ cup Celery diced - Optional extra crunch
  • ½ cup Water chestnuts chopped - Optional
  • ¼ cup Sliced almonds - Optional
  • 1 cup Cheddar cheese shredded - Optional for extra cheesiness

  • 1 9x13 inch baking dish (For assembling and baking the casserole)

Method
 

  1. Cook and shred chicken, then mix soup, sour cream, poppy seeds, lemon juice, and seasonings.

  2. Spread chicken mixture in greased dish, crush crackers, mix with butter, and sprinkle topping over casserole.
