Peanut Butter Cup Cookies

Soft, chewy peanut butter cookies with a thumbprint center filled with a melty mini Reese’s cup. No mixer needed. Just one bowl, a wooden spoon, and a whole lot of joy.

Ingredients
  

Cookie Dough
  • 1 cup Creamy peanut butter - Not natural
  • ½ cup Granulated sugar
  • ½ cup Light brown sugar - Packed
  • 1 large Egg - Room temperature
  • 1 teaspoon Pure vanilla extract - Adds warmth and depth
  • 1 ¼ cups All-purpose flour - Spoon & level
  • ½ teaspoon Baking soda
  • ¼ teaspoon Salt
Chocolate Centers
  • 24 count Mini Reese’s peanut butter cups - Unwrapped
Optional Finishes
  • to taste Flaky sea salt - Sprinkle before baking
  • ¼ cup Mini chocolate chips - Add after baking
  • ¼ cup Chopped peanuts - Mix into dough or sprinkle

Equipment

  • 1 Large mixing bowl (For mixing dough by hand)
  • 1 Wooden Spoon (Or use a rubber spatula)
  • 1 Measuring cups & spoons (Standard set)
  • 1 Cookie scoop (1.5 tablespoon size for uniform cookies)
  • 2 Baking sheets (Heavy-duty preferred)
  • 1 Wire cooling rack (Helps avoid soggy bottoms)
  • 1 Parchment paper (Don’t substitute with wax paper)

Method
 

  1. Mix peanut butter, sugars, egg, and dry ingredients until just combined.

  2. Scoop dough, press into balls, and make a deep thumb well in each.

  3. Bake at 350°F for 9–11 minutes, edges set but centers slightly soft.

  4. Let cookies rest on the pan for 5 minutes, then transfer to rack for serving.
