Ingredients
  

  • 1 cup Medjool dates soft, pitted, and tightly packed for sweetness
  • 2 tablespoons nut butter smooth peanut or almond butter works best
  • 2 tablespoons coconut milk full-fat for richness, or any milk alternative
  • 1 –2 teaspoons vanilla extract pure vanilla recommended for depth
  • 1 cup dark chocolate dairy-free if keeping vegan
  • Flaky sea salt optional garnish for contrast

Method
 

  1. If the dates feel firm or dry, place them in a bowl and cover with hot water for about 10–15 minutes, then drain thoroughly. prep
  2. Place the dates, nut butter, coconut milk, and vanilla into a food processor or high-speed blender and blend until completely smooth, stopping to scrape the sides as needed. mix
  3. Adjust the texture if necessary by adding a small splash of milk for looseness, or increase sweetness with extra dates or a drizzle of maple syrup if desired. mix
  4. Line a loaf pan with parchment paper, then press the caramel mixture evenly into the pan, smoothing the top. assemble
  5. Transfer the pan to the freezer and chill for 1–2 hours, or until the mixture is firm enough to slice cleanly. bake
  6. Remove from the freezer and quickly slice into 15 pieces, then dip each portion into melted chocolate and sprinkle with flaky salt before the coating sets. finish
