Ingredients
  

For the Marsala Chicken Orzo
  • 1.5 lb Boneless skinless chicken breasts - Cut into bite-sized chunks
  • 0.5 cup All-purpose flour - For dredging
  • 1 teaspoon Salt
  • 0.5 teaspoon Black pepper
  • 0.5 teaspoon Garlic powder
  • 3 tablespoon Butter - Divided use
  • 2 tablespoon Olive oil
  • 8 oz Mushrooms - Sliced
  • 3 cloves Garlic - Minced
  • 0.75 cup Marsala wine - Use dry Marsala not sweet
  • 2 cups Chicken broth
  • 1 cup Orzo pasta - Dry uncooked
  • 0.5 cup Heavy cream - Optional for richness
  • 0.5 cup Parmesan cheese - Grated
  • Fresh parsley - Chopped for garnish
  • Extra salt and pepper - To taste
Optional Add-Ins
  • 1 tablespoon Tomato paste - Adds depth to sauce
  • 1 sprig Fresh thyme - For extra flavor
  • Baby spinach - Stir in at the end

Equipment

Method
 

  1. Cut chicken into pieces, dredge in seasoned flour, and set aside before browning.

  2. Sear chicken in butter and oil until golden, then remove from skillet.
  3. Sauté mushrooms in remaining butter until browned, then add garlic for 1 minute.
  4. Add Marsala wine to deglaze the pan, reduce slightly, then stir in broth.
