Ingredients
  

  • 2.2 pounds boneless skinless chicken breasts (Cut into thin cutlets or bite-sized cubes)
  • 4 tablespoon olive oil divided (For searing the chicken and sautéing vegetables)
  • 1 teaspoon salt Or to taste
  • ½ teaspoon black pepper Or to taste
  • ¼ teaspoon cayenne pepper Optional, adds a subtle kick
  • 1 large red onion thinly sliced (Adds sweetness and depth to the sauce)
  • 5 cloves garlic minced (For a fragrant, savory base)
  • ½ cup dry white wine Pinot Grigio or Sauvignon Blanc recommended
  • ¾ cup water Used to balance the sauce consistency
  • ¼ cup tomato paste Rich, concentrated tomato flavor
  • 1 ¼ cups heavy cream Makes the sauce creamy and indulgent
  • ½ cup sun-dried tomatoes packed in oil, drained and roughly chopped (For a tangy, flavorful burst)
  • ½ cup fresh basil leaves roughly chopped (Adds a fresh, herbaceous note)

Method
 

  1. Pat dry the chicken breasts and cut into thin cutlets or bite-sized cubes. prep
  2. Place the chicken in a bowl and add 2 tablespoon of olive oil, salt, pepper, and cayenne. Toss to coat, then let marinate for at least 15 minutes. prep
  3. Heat the remaining olive oil in a large skillet over medium-high heat. Once hot, add the chicken in a single layer and sear until golden and cooked through, about 7-8 minutes per side. Remove from the pan and set aside. cook
  4. Lower the heat to medium. Add the sliced onion and sauté for 3-4 minutes until soft and translucent. cook
  5. Add the minced garlic and cook for an additional minute, until fragrant. cook
  6. Deglaze the pan by adding the white wine, scraping up any browned bits from the bottom of the pan. Simmer until the wine is reduced by half, about 2 minutes. mix
  7. Stir in the tomato paste and water. Simmer over low heat for about 5 minutes until the sauce thickens slightly. mix
  8. Add the heavy cream, sun-dried tomatoes, and chopped basil. Stir to combine. mix
  9. Return the cooked chicken to the skillet and simmer for another 5-7 minutes, allowing the sauce to thicken and coat the chicken. Taste and adjust the seasoning if needed. finish
  10. Serve the chicken hot with your favorite sides, such as mashed potatoes, rice, or a simple salad. finish
