Ingredients
  

🔸 For the Gravy Base
  • 1 cup Raw cashews - Divided – half for blending half whole
  • 2 Tomatoes - Chopped or use 1 cup canned crushed
  • 1 Yellow onion - Finely chopped
  • 1 tablespoon Fresh ginger - Grated or paste
  • 4 Garlic cloves - Minced
  • 1-2 Green chilies - Chopped adjust to taste
  • ¾ cup Water or vegetable broth - To thin the gravy
🔸 The Spices
  • 1 teaspoon Cumin seeds - Whole
  • teaspoon Coriander powder
  • ½ teaspoon Turmeric powder
  • 1 teaspoon Red chili powder - Adjust to heat preference
  • 1 teaspoon Garam masala - Add at end
  • Salt - To taste
🔸 For Finishing
  • 1 tablespoon Butter or ghee
  • 2 tablespoon Cream - Optional – or coconut cream
  • 1 teaspoon Kasuri methi - Crushed between palms
  • 2 tablespoon Fresh cilantro - Chopped for garnish
  • ¼ teaspoon Jaggery or sugar - Optional – balances acidity

Equipment

  • 1 Large pot or skillet (Deep enough to hold gravy and cashews)
  • 1 Blender (Regular or immersion blender)
  • 1 Knife (For chopping vegetables)
  • 1 Cutting board
  • 1 Wooden Spoon (Or heatproof silicone spatula)
  • 1 Measuring spoons (For precise spice amounts)

Method
 

  1. Heat oil and toast cumin seeds until they pop and smell fragrant.

  2. Sauté onions, garlic, ginger, tomatoes, and green chilies until soft.
