Ingredients
  

  • 1.5 lbs. boneless skinless chicken thighs (or breasts, pounded to ½-inch thickness for even cooking)
  • 1 teaspoon smoked paprika adds a smoky flavor
  • ¼ teaspoon garlic powder for depth of flavor
  • ¼ teaspoon salt to season
  • 1 tablespoon cooking oil for searing the chicken
  • ½ cup chicken broth helps to deglaze the skillet and create the sauce
  • 2 tablespoon stone ground or whole grain mustard adds tanginess and texture
  • 2 tablespoon honey sweetens the sauce
  • 1 tablespoon butter to finish the sauce with richness

Method
 

  1. Heat a large skillet over medium heat. While the skillet is preheating, combine the smoked paprika, garlic powder, and salt in a small dish. Sprinkle the spice mixture evenly over both sides of the chicken thighs.
  2. Once the skillet is heated, add the cooking oil and swirl to coat the bottom of the pan. Place the chicken pieces in the skillet and cook for about 5 minutes on each side, or until well-browned and fully cooked through. Transfer the chicken to a clean plate.
  3. Add the chicken broth to the skillet and stir to dissolve the browned bits from the bottom of the skillet. Let the broth simmer for 5 minutes, allowing it to reduce by half.
  4. Stir in the mustard, honey, and butter, then continue to stir until everything is melted and fully combined.
  5. Return the chicken and any juices back to the skillet. Allow the sauce to simmer for a couple of minutes while spooning the honey mustard sauce over the chicken. Serve immediately.
