Ingredients

  • 1.25 cup unsalted butter adds richness and keeps the texture soft
  • 0.94 cup unsweetened cocoa powder provides deep chocolate flavor
  • 0.63 cup all-purpose flour gives structure without firmness
  • 0.31 teaspoon salt balances sweetness and enhances cocoa
  • 5 large eggs create body and custardy texture
  • 2.5 cups granulated sugar sweetens and stabilizes the batter
  • 1.25 teaspoons vanilla bean paste adds warmth and aroma
  • powdered sugar optional, for a light decorative finish

Method

  1. Set the oven to 325°F and generously grease a baking dish, then prepare a larger pan that will later hold hot water. prep
  2. Gently melt the butter using the stovetop or microwave and let it cool slightly before using. prep
  3. Combine the cocoa powder, flour, and salt in a small bowl, whisking thoroughly to remove any lumps. mix
  4. Beat the eggs and sugar together on medium-high speed until the mixture becomes pale, thick, and airy. mix
  5. Lower the mixer speed and blend in the vanilla, followed by the cocoa mixture until just combined. mix
  6. Slowly pour in the melted butter while mixing, stopping once the batter comes together smoothly. mix
  7. Scrape the bowl well and stir once by hand, then transfer the batter into the prepared baking dish. assemble
  8. Place the baking dish into the larger pan and carefully pour in hot water until it reaches halfway up the sides. assemble
  9. Bake for one hour until the edges are set but the center remains soft and pudding-like. bake
  10. Remove from the oven and allow to cool slightly before serving warm, room temperature, or chilled. finish

Notes

This dessert is best when the center is still warm and molten, the kind of chocolate treat that makes everyone pause after the first bite.
