- In a bowl, mash the ripe bananas with a fork until smooth. prep
- Stir in the brown sugar, vanilla extract, cinnamon, nutmeg, and a pinch of salt. mix
- Sift the flour into the banana mixture and stir with a spoon until fully combined. mix
- Heat oil in a 10-inch skillet over medium-high heat. prep
- Once the oil is hot, spoon the banana fritter batter into the skillet. cook
- Once the first side turns golden and bubbles appear on the top, flip the fritter to cook the other side. cook
- Remove the fritters from the oil and place them on paper towels to drain excess oil. finish

The riper your bananas are, the sweeter the fritters will be. Adjust the sugar to your preference. If using a cast iron skillet, lower the heat to medium.
