Ingredients
  

  • 3 cups cooked Day-old rice - Preferably long grain or jasmine
  • 2 large Eggs - Beaten
  • 2 tablespoon Vegetable oil - Or sesame oil
  • 3 cloves Garlic - Minced
  • 4 stalks Green onions - Chopped for garnish and cooking
  • 1 cup mixed Frozen peas & carrots - Or any mixed vegetables
  • 1 cup cooked Protein chicken, shrimp, pork - Optional, diced
  • 2 tbsp Soy sauce - Or tamari/coconut aminos
  • 1 tbsp Oyster sauce - Optional
  • ½ tsp White pepper - Or black pepper
  • To taste - Salt
  • 1 tsp Sesame oil - For finishing drizzle
  • 1 tbsp Chinese rice wine(Shaoxing) - Optional, adds brightness

Equipment

  • 1 Large skillet / wok (Bigger pan preferred)
  • 1 Spatula (Metal spatula recommended)
  • 1 Cutting board (For chopping vegetables)
  • 1 Sharp knife
  • 1 Small bowl (For beating eggs)

Method
 

  1. Break up cold rice, beat eggs, chop vegetables, and get everything ready by the stove.

  2. Heat pan on high, scramble eggs quickly, then remove when just set.
