Ingredients
  

For the French Onion Chicken Casserole
  • 4 Boneless skinless chicken breasts - Patted dry
  • 1 can 10.5 oz - Condensed French onion soup Undiluted
  • 1 cup Sour cream - Or Greek yogurt substitute
  • ½ cup Chicken broth - Adds extra moisture
  • 2 cups Shredded mozzarella cheese - Melty and mild
  • 1 cup Shredded cheddar cheese - Adds sharper flavor
  • Salt and pepper - To season chicken
  • 1 cup Crispy fried onions - For crunchy topping
  • ½ cup Shredded cheese - For final topping
  • Fresh parsley - For garnish
Optional Add-ins
  • 1 cup sliced mushrooms
  • 1 onion - thinly sliced
  • 2 cloves garlic - minced
  • 2 cups cooked rice - or noodles
  • 8 oz cooked egg noodles
  • Sliced potatoes - or biscuit dough on top

Method
 

  1. Preheat oven, grease baking dish, season chicken, and arrange in single layer.
  2. Mix French onion soup, sour cream, broth, and cheeses until smooth and creamy.
  3. Pour sauce over chicken, top with remaining cheese, and cover tightly with foil.
    Unbaked chicken breasts in a foil-lined tray, covered in red sauce and topped generously with shredded cheese.
  4. Bake for 30 minutes covered, then remove foil carefully and check chicken.
