Ingredients
  

For the Baked Feta Tomato Pasta:
  • 8 ounces feta cheese - Use a block not crumbled
  • 2 pints cherry tomatoes - Can swap with grape tomatoes
  • cup extra virgin olive oil - Drizzle evenly
  • 4 cloves garlic - Peeled and smashed
  • ½ teaspoon salt
  • ¼ teaspoon black pepper - Freshly ground
  • ½ teaspoon red pepper flakes - Adjust to taste
  • 12 ounces short pasta - Rigatoni penne, or shells
  • 1 tablespoon salt - For pasta water
  • 1 cup reserved pasta water -For sauce consistency
For Serving and Extras:
  • ½ cup fresh basil leaves - Half baked half added fresh
  • 1 lemon zest - From 1 lemon
  • grated parmesan cheese - Optional garnish
  • red pepper flakes - Optional for serving
  • balsamic glaze - Optional drizzle
  • 2 cups cooked chicken breast - Optional add-in
  • 1 pound cooked shrimp - Optional add-in
  • 1 pound Italian sausage - Cooked and crumbled
  • 1 cup cooked bacon pieces - Optional for flavor

Equipment

  • 1 9x13 inch baking dish (Glass or ceramic preferred)
  • 1 Large pot (For boiling pasta)
  • 1 Wooden spoon or tongs (For mixing sauce and pasta)
  • 1 Colander (For draining pasta)

Method
 

  1. Preheat oven and prepare baking dish with feta, tomatoes, garlic, and olive oil.

  2. Roast tomatoes and feta until soft, golden, and bursting with flavor.
  3. Cook pasta in salted water until al dente, then drain and reserve water.
  4. Mix pasta with baked feta and tomatoes, adding pasta water to create creamy sauce.
