Eggs in Hash Brown Nests

These crispy hash brown nests filled with perfectly baked eggs make a fun, delicious side for brunch or breakfast gatherings!

Ingredients
  

  • 6 medium Russet potatoes for shredding; about 6 to 8 potatoes
  • Salt and pepper to taste (for seasoning the potatoes and eggs)
  • 24 large eggs for baking in the nests
  • Non-stick cooking spray to coat muffin pans and nests

Method
 

  1. Bake the potatoes for 45 minutes to 1 hour, or until just tender but with a little bite. Let them cool. prep
  2. Peel the cooled potatoes and grate them using the largest grater. Season generously with salt and pepper. prep
  3. Increase the oven temperature to 425°F (220°C). prep
  4. Generously spray two muffin pans with non-stick cooking spray. prep
  5. Scoop about 3 to 4 tablespoons of grated potatoes into each muffin cup. Use your fingers to gently press them into a nest shape, but do not compact them too tightly. prep
  6. Lightly spray the nests again with cooking spray. bake
  7. Bake the nests for 15 to 20 minutes, or until golden brown. If they are not browning, increase the temperature to 450°F. Check to ensure they do not burn. bake
  8. Let the nests cool for a few minutes. Crack an egg into each nest. Sprinkle with salt and pepper. bake
  9. Bake the nests for 10 to 15 minutes, until the egg whites are set. Remove from the muffin pan using a spoon or fork. serve
