Ingredients
  

  • 5-6 chicken thighs with skin, or use boneless, skinless chicken breasts
  • ½ cup fresh cranberries or thawed frozen cranberries
  • 1 tablespoon honey or maple syrup
  • 1 tablespoon olive oil for cooking
  • Marinade:
  • ¼ cup fresh cranberries for the marinade
  • 1 tablespoon brown sugar adds sweetness
  • 2 tablespoons olive oil for blending the marinade
  • 2 tablespoons honey or maple syrup
  • 1 tablespoon balsamic vinegar for tang
  • 2 cloves garlic minced
  • 1 large orange zested and juiced
  • ¼ teaspoon sea salt for seasoning
  • teaspoon black pepper for seasoning

Equipment

  • 1 8x8-inch roasting pan The perfect size for six servings. Make sure it's oven-safe and can handle the broiler heat.
  • 1 Small bowl For mixing the honey and olive oil finishing glaze.
  • 1 Broiler Most ovens have a broiler setting. This final step creates that irresistible crispy skin.
  • 1 Meat mallet (optional) If using chicken breasts, a quick pound helps them cook evenly.

Method
 

  1. Combine all the marinade ingredients in a food processor and blend until smooth. prep
  2. Place the chicken in a large ziplock bag or deep dish and pour the marinade over it. Let the chicken marinate for at least 2 hours, or overnight for best flavor. prep
  3. Add the remaining fresh cranberries around the chicken in the pan, spreading them evenly. assemble
  4. Bake the chicken for 25-30 minutes, until it reaches an internal temperature of 155°F (68°C). When finished, mix 1 tablespoon of honey and 1 tablespoon of olive oil, then brush it over the chicken. bake
  5. Preheat the broiler and broil the chicken for 2-3 minutes, or until the skin becomes crispy. Be sure to watch closely to avoid burning. finish
  6. Discard the leftover marinade and garnish the chicken with fresh orange zest and additional cranberries. Serve and enjoy! finish
