Ingredients
  

  • 2 boneless skinless chicken breasts (about 1.5 lbs, pounded to an even thickness)
  • 1 cup breadcrumbs for coating, preferably panko for extra crunch
  • cup grated parmesan cheese adds flavor to the breading
  • 1 teaspoon garlic powder for seasoning
  • 1 teaspoon Italian seasoning adds a classic herb flavor
  • 1 teaspoon salt to season the chicken
  • Freshly cracked pepper to taste
  • 1 egg for dredging
  • ½ cup all-purpose flour for dredging the chicken
  • ¼ cup cooking oil for frying, such as vegetable or canola oil
  • ½ cup marinara sauce for topping, use your favorite brand or homemade
  • 1 cup shredded mozzarella cheese for topping, whole milk or part-skim mozzarella
  • 1 tablespoon chopped fresh parsley optional, for garnish

Method
 

  1. Use a sharp knife to carefully slice the chicken breasts into two even cutlets, making 4 pieces in total. prep
  2. Season both sides of each chicken cutlet with salt, pepper, garlic powder, and Italian seasoning. prep
  3. In a shallow bowl, combine breadcrumbs, parmesan cheese, garlic powder, Italian seasoning, salt, and pepper. mix
  4. Dredge each piece of chicken in the flour, shaking off any excess. Then dip in the egg mixture, ensuring it’s fully coated, and finally coat in the breadcrumb mixture, pressing lightly to adhere. prep
  5. Heat the oil in a large skillet over medium-high heat. Once the oil is hot, add the chicken and cook until golden brown on the first side, about 5 minutes. flip the chicken halfway through to cook both sides. cook
  6. Flip the chicken cutlets and reduce the heat to medium. Spoon 2 tablespoons of marinara sauce onto each cutlet and top with ¼ cup shredded mozzarella. Cover the skillet with a lid and cook for an additional 5-7 minutes, until the cheese is melted and the chicken is fully cooked through. cook
  7. Remove the chicken from the skillet, top with chopped parsley (optional), and serve with spaghetti and extra marinara sauce if desired. finish
