Ingredients
  

  • ¾ cup heavy whipping cream used for cooking the custard sauce
  • 1 dash salt balances sweetness in the sauce

  • 4 large egg yolks form the French toast custard

  • 1 16- ounce loaf brioche bread preferably thick sliced for structure
  • 3 tablespoons butter used for greasing the cooking surface
  • cup granulated sugar used for the brûléed topping

Method
 

  1. Warm the cream and salt in a saucepan over gentle heat until steaming but not boiling. prep
  2. Whisk the egg yolks and sugar together until pale, thick, and smooth. mix
  3. Slowly pour the hot cream into the egg mixture while whisking continuously. mix
  4. Return the mixture to the saucepan and cook while whisking until it thickens enough to coat a spoon, then remove from heat and stir in vanilla. cook
  5. Preheat a griddle or skillet over medium heat. prep
  6. Whisk the egg yolks, cream, milk, and vanilla together in a shallow dish until combined. mix
  7. Dip each slice of brioche briefly on both sides in the custard mixture. assemble
  8. Butter the hot cooking surface and cook the soaked bread until golden on both sides, flipping once. cook
  9. Sprinkle sugar evenly over each slice and caramelize with a kitchen torch until bubbling and amber colored. finish
  10. Serve immediately with warm custard sauce spooned over the top. finish
