Creamy Esquites Corn Cups

Ingredients
  

  • 1 ½ tablespoons salted butter softened for easy melting
  • ½ cup onion finely diced for sweetness, optional
  • 1 jalapeño or serrano pepper seeded and minced for mild heat, optional
  • ½ cup water used to steam the corn
  • 6 ears corn kernels sliced off the cob, about 4 ½ cups
  • ½ teaspoon salt adjusted to taste
  • ½ teaspoon black pepper freshly ground for best flavor
  • 8 tablespoons mayonnaise full-fat for creaminess
  • 8 tablespoons Mexican crema or sour cream room temperature for easy mixing
  • ½ cup Cotija cheese finely grated for even coverage
  • Chili powder Tajín, or hot sauce (added to preferred spice level)
  • 2 limes cut into wedges for squeezing

Method
 

  1. Melt the butter in a skillet set over medium heat, then add the onion and pepper and cook until softened and fragrant. prep
  2. Pour in the water and corn kernels, cover the pan, and cook while stirring occasionally until the corn is tender. mix
  3. Season the cooked corn lightly with salt and pepper, then divide it evenly into six serving cups. assemble
  4. Add mayonnaise and crema to each cup and stir thoroughly until the corn is evenly coated. mix
  5. Top each portion generously with grated cheese and chili seasoning, then finish with fresh lime juice and serve right away. finish
