Ingredients
  

  • 1.25 lbs chicken thighs cut into 2-inch pieces, can substitute chicken breast
  • 1 tablespoon Italian seasoning dry mix for flavoring
  • ½ teaspoon smoked paprika adds smoky depth
  • ½ teaspoon salt adjust to taste
  • ¼ teaspoon black pepper freshly ground recommended
  • 2 tablespoon cooking oil neutral, for sautéing
  • 1 medium yellow onion diced, for aromatics
  • 2 garlic cloves minced, enhances flavor
  • 2 tablespoon salted butter divided, for richness
  • 1 lb potato gnocchi dry or fresh, adds soft texture
  • 2 cups fresh spinach roughly chopped, provides greens
  • 1 cup vegetable broth low-sodium preferred
  • ½ cup heavy cream or coconut cream for dairy-free
  • ¼ cup Parmesan cheese grated, or nutritional yeast for vegan option

Method
 

  1. Dice the chicken thighs into bite-sized pieces and toss with Italian seasoning, smoked paprika, salt, and pepper until coated. prep
  2. Heat a large skillet over medium heat and add the cooking oil until shimmering. prep
  3. Add chicken to the skillet and sear undisturbed for 3 minutes, then stir and cook an additional 3 minutes until browned and cooked through. Remove chicken and leave fat in the skillet. cook
  4. Add diced onion and minced garlic to the skillet and sauté until the onions are soft and garlic is fragrant, about 2 minutes. prep
  5. Stir in the gnocchi and 1 tablespoon of butter, allowing it to brown lightly for 2 minutes. cook
  6. Add chopped spinach and vegetable broth to the skillet, cover, and cook 1–2 minutes until spinach is wilted and gnocchi has absorbed some liquid. cook
  7. Pour in the heavy cream and add the remaining tablespoon of butter. Stir until butter melts and cream is hot but not boiling. mix
  8. Remove skillet from heat and fold in Parmesan cheese until melted and sauce is velvety. finish
  9. Return cooked chicken to the skillet and gently mix into the gnocchi and cream sauce. Garnish with parsley if desired. assemble
