  • 1 pound ground pork use lean ground pork for a less fatty option
  • 2 tablespoons maple syrup for a touch of natural sweetness
  • 1 teaspoon kosher salt adds flavor and enhances the spices
  • ½ teaspoon dried sage provides a slightly earthy, savory flavor
  • ½ teaspoon dried marjoram optional, or substitute with oregano for a milder flavor
  • ½ teaspoon ground black pepper adds a bit of heat
  • ¼ teaspoon nutmeg for warmth and complexity
  • ¼ teaspoon red pepper flakes for a subtle spicy kick
  • 1 tablespoon extra-virgin olive oil for cooking the sausages

Method
 

  1. In a large bowl, combine ground pork, maple syrup, kosher salt, sage, marjoram, black pepper, nutmeg, and red pepper flakes. Use your hands to mix until fully combined.
  2. Use a cookie scoop or your hands to divide the mixture into 12 equal portions. Roll them into balls.
  3. Heat olive oil in a large non-stick frying pan over medium heat. Add six sausage balls to the pan. Flatten each ball with your fingers, wetting them if needed to prevent sticking. Cook for 2–3 minutes per side until golden and cooked through.
  4. Transfer the sausages to a serving plate and serve immediately.
