- Preheat oven to 375°F and lightly spray a 9x13-inch baking dish with cooking spray. Set aside for assembly.

- In a large skillet over medium-high heat, cook ground beef and diced onion for 6–8 minutes until no pink remains. Drain any excess grease.

- Stir in canned chili, diced tomatoes with green chilies, and chili seasoning. Simmer for 5 minutes to thicken. Season with salt and pepper if needed.
- Pour the chili mixture into the prepared baking dish, spread evenly, sprinkle with 2 cups of cheese, and arrange frozen tater tots in a single layer on top.
- Bake uncovered for 30–35 minutes until tots are golden and crispy. Add remaining cheese and bake 5 more minutes until melted. Rest 5 minutes before serving with toppings.
