Ingredients
  

  • 4 fully-cooked chicken sausage links use your preferred flavor of chicken sausage
  • 2 tablespoon cooking oil divided (for sautéing)
  • 1 small yellow onion diced (adds flavor and texture)
  • 2 cloves garlic minced (for aromatic flavor)
  • 2 15 oz. cans cannellini beans drained (these white beans add creaminess and protein)
  • ½ teaspoon salt adjust to taste
  • ½ teaspoon dried oregano adds a warm, herbal note
  • ¼ teaspoon smoked paprika for a smoky depth of flavor
  • ¼ teaspoon freshly cracked black pepper to taste
  • 1 cup chicken broth for creating the sauce and adding moisture
  • 2 cups spinach roughly chopped (for color and nutritional boost)

Method
 

  1. Heat a large skillet over medium heat and add 1 tablespoon of oil. Add the sliced chicken sausage to the skillet and brown on both sides for 1-2 minutes. Be careful not to burn the sausage. Once browned, remove the sausage from the skillet and set it aside. prep
  2. In the same skillet, add the remaining 1 tablespoon of oil, along with the diced onion and minced garlic. Sauté for about 3 minutes or until the onion is translucent and the garlic is fragrant. prep
  3. Add the drained cannellini beans to the skillet (do not rinse, as the residual liquid helps create the sauce). Add salt, oregano, smoked paprika, and cracked black pepper, then pour in the chicken broth. mix
  4. Gently stir everything together and bring to a simmer. Simmer for 4-5 minutes to allow the flavors to meld. simmer
  5. Add the chopped spinach to the skillet, allowing the heat to wilt it. Then return the browned chicken sausage to the skillet and gently stir to combine all the ingredients. mix
  6. Serve hot with crusty bread and top with freshly cracked black pepper or red pepper flakes, if desired. Enjoy! finish
