  • 4 large Flour tortillas - 10-inch
  • 2 cups Cooked chicken - shredded or chopped
  • 2 cups Shredded cheese - Mexican blend cheddar, or Monterey Jack
  • 1–2 tablespoon Vegetable oil or butter - for brushing

  • 1 teaspoon Chili powder
  • ½ teaspoon Cumin
  • ½ teaspoon Garlic powder
  • ½ teaspoon Onion powder
  • ½ teaspoon Paprika - optional
  • Salt & pepper - to taste

Equipment

  • 1 Large skillet or griddle (10–12 inch)
  • 1 Spatula (wide, for flipping)
  • 1 Sharp knife (for cutting)
  • 1 Cutting board

Method
 

  1. Season cooked chicken with chili powder, cumin, garlic powder, and salt. Shred or chop into bite-sized pieces. Grate cheese if using a block. Heat skillet over medium heat.

  2. Brush tortilla lightly with oil or butter, place in skillet oil-side down. Sprinkle half with cheese, add chicken, top with more cheese, then fold tortilla over.

  3. Cook for 2–3 minutes until bottom is golden brown.
