Ingredients
  

  • 2 pounds boneless skinless chicken breasts (cut into 1-inch cubes)
  • 2 tablespoons olive oil for cooking chicken
  • ½ teaspoon salt divided
  • ½ teaspoon black pepper divided
  • 16 ounces frozen broccoli florets thawed
  • 2 10.5-ounce cans cream of chicken soup (or homemade substitute)
  • 1 cup mayonnaise can substitute with light mayonnaise
  • 1 cup sour cream plain Greek yogurt can be used as an alternative
  • 1 cup shredded cheddar cheese for creamy texture
  • ½ cup milk whole or reduced-fat
  • 1 tablespoon lemon juice for a touch of freshness
  • 1 teaspoon garlic powder adds flavor
  • ½ teaspoon onion powder enhances taste
  • 1 cup plain breadcrumbs for topping
  • 2 tablespoons unsalted butter melted, for topping

Method
 

  1. Preheat the oven to 350°F (175°C). Grease a 9x13-inch baking dish. Set aside. prep
  2. Heat olive oil in a large skillet over medium-high heat. prep
  3. Add chicken cubes to the skillet and season with salt and ¼ teaspoon pepper. Cook, stirring occasionally, until chicken is golden brown and cooked through, about 8-10 minutes. Set aside. prep
  4. Thaw the frozen broccoli according to package instructions. Drain well and pat dry with paper towels to remove excess moisture. prep
  5. In a large mixing bowl, combine the cream of chicken soup, mayonnaise, sour cream, cheddar cheese, milk, lemon juice, garlic powder, onion powder, and the remaining ¼ teaspoon of pepper. Stir to mix evenly. mix
  6. Fold in the cooked chicken and thawed, drained broccoli, ensuring everything is evenly coated. mix
  7. Spread the mixture evenly into the prepared baking dish. assemble
  8. In a small bowl, combine breadcrumbs and melted butter. Stir to coat the breadcrumbs in butter, then sprinkle evenly over the casserole. assemble
  9. Bake for 30 minutes, or until the top is golden brown and the casserole is bubbling around the edges. bake
