Ingredients
  

  • 4 lbs. bone-in chicken skin-on (Chicken legs or thighs work well; adjust cooking time accordingly)
  • ½ cup soy sauce 4 oz. (Use low-sodium soy sauce if preferred)
  • ½ cup apple cider vinegar 4 oz. (Provides a tangy flavor balance)
  • 2 tablespoon vegetable oil 1 oz. (For sautéing)
  • 2 tablespoon honey 1 oz. (Adds sweetness to balance the vinegar)
  • 2 bay leaves whole (Aromatic herb for depth)
  • 1 tablespoon garlic minced, about 2 cloves (Fresh garlic for flavor)
  • 1 tablespoon black peppercorns whole (Crushed for an extra kick)

Method
 

  1. Arrange the chicken in a large pot in a single layer. Remove skin if desired. prep
  2. In a bowl, whisk together soy sauce, apple cider vinegar, honey, vegetable oil, garlic, bay leaves, and peppercorns until the honey dissolves. Pour marinade over the chicken. Cover and refrigerate for at least 8 hours or overnight. marinate
  3. When ready to cook, add just enough water (about ½ cup) to cover the chicken. Cover the pot and bring to a rolling boil over high heat. Reduce heat to medium-low and simmer for 30 minutes. cook
  4. Preheat your broiler on high. Remove chicken from the pot and place on a broiler pan or a sheet pan with cooling racks. Broil the chicken for 5-10 minutes until crispy and browned on top. broil
  5. While the chicken is broiling, bring the soy/vinegar sauce to a boil over high heat. Let it reduce by half, which may take an additional 5-10 minutes. cook
  6. Once the chicken is browned, brush with the reduced soy/vinegar sauce or toss the chicken in the sauce. Serve over rice or noodles and spoon more sauce on top. finish
