  • 1 large crusty round loaf sourdough or Italian bread works best
  • ½ cup unsalted butter melted (for garlic butter)
  • 4 cloves garlic minced (or more to taste for extra flavor)
  • 2 tablespoons fresh parsley finely chopped (for garnish and flavor)
  • ½ teaspoon kosher salt balances the butter and cheese
  • 2 cups shredded mozzarella cheese freshly shredded melts smoother
  • ½ cup shredded cheddar or provolone optional mix for added flavor
  • ¼ cup grated Parmesan cheese to sprinkle after baking for a savory finish

Method
 

  1. Preheat the oven to 375°F (190°C) and prepare a baking sheet by lining with foil and greasing it lightly. prep
  2. Place the bread on a cutting board. Using a sharp knife, make diagonal cuts about 1 inch apart, stopping just before the bottom. Rotate 90° and cut again to form a crosshatch pattern. prep
  3. In a small bowl, combine the melted butter, minced garlic, chopped parsley, and kosher salt until evenly mixed. mix
  4. Gently open the bread crevices and brush the garlic butter into each gap, making sure to coat thoroughly. assemble
  5. Stuff the shredded mozzarella (and optional cheddar or provolone) into all the crevices generously. assemble
  6. Wrap the loaf loosely in foil and bake for 15 minutes until the cheese starts to melt. bake
  7. Remove the foil and continue baking for 5–7 minutes until the top is golden and the edges are crisp. bake
  8. Sprinkle with Parmesan cheese and additional parsley immediately after baking. Serve warm for guests to pull apart the cheesy bread easily. finish
