  • 1.5 lbs boneless chicken breasts - Cut into strips or pieces
  • 2–3 tbsp cajun seasoning - Use more for stronger flavor
  • 2 tablespoon olive oil - For cooking chicken
  • salt and black pepper - To taste
For the Pasta
  • 12 oz penne or fettuccine - Cooked al dente
  • salted water - For boiling pasta
For the Sauce
  • 1 red bell pepper -Sliced
  • 1 yellow or green bell pepper - Sliced
  • 1 small onion - Sliced
  • 3–4 garlic cloves - Minced
  • cups heavy cream
  • ½ cup chicken broth
  • ½ cup grated Parmesan cheese - Freshly grated preferred
  • 1–2 tablespoon cajun seasoning - Adjust to taste
  • 2 tablespoon butter - Unsalted
Optional Add-ins
  • ½ cup cherry tomatoes - Halved
  • 1 cup baby spinach - Stir in at the end
  • red pepper flakes - For heat
  • fresh parsley - For garnish
  • extra Parmesan - For topping
