🥣 For Cilantro Lime Rice
  • 1 cup white rice - or brown riceuncooked
  • cups water - adjust per package directions
  • 1 tablespoon butter - or olive oil
  • 1 garlic clove - smashedoptional, for steeping
  • 1 bay leaf optional, for steeping
  • 1 tablespoon lime juice - freshly squeezed
  • 1 teaspoon honey - optional but highly recommended
  • 2 tablespoon fresh cilantro - chopped
  • salt - to taste
🍗 For Protein (Chicken Version)
  • lbs chicken breast - or thighs cut into bite-sized pieces
  • 1 tablespoon olive oil - for cooking
  • 1 teaspoon chili powder
  • ½ teaspoon cumin
  • ½ teaspoon garlic powder
  • ½ teaspoon paprika
  • salt & pepper - to taste
🫘 For Black Beans
  • 1 can black beans - drained and rinsed
  • ½ teaspoon cumin
  • ½ teaspoon garlic powder
  • salt - pinch to taste
  • 2 tablespoon water - to thin if needed
🥗 Fresh Toppings (Flexible)
  • 1 cup shredded lettuce - or spinach/cabbage
  • 1 cup diced tomatoes - drained if too juicy
  • ½ cup corn canned roasted, or fresh
  • 1 avocado - diced or mashed
  • ½ cup shredded cheese - cheddar Monterey jack, etc.
  • ¼ cup sour cream - or Greek yogurt
  • ¼ cup salsa or pico de gallo
  • jalapeños - optional
  • lime wedges - for garnish
  • fresh cilantro - for garnish

Method
 

  1. Cook rice with lime, cilantro, and a hint of butter for flavor.
