  • 1 large head Cauliflower - Cut into bite-sized florets
  • 1 cup All-purpose flour - Or gluten-free blend
  • 1 cup Milk -Or plant-based milk
  • 1 teaspoon Garlic powder
  • 1 teaspoon Onion powder
  • 1 teaspoon Paprika
  • ½ teaspoon Salt
  • ½ teaspoon Black
  • ½ cup Frank’s - Or other hot sauce
  • 3 tablespoon Butter - Or vegan butter
  • 1 teaspoon White vinegar
  • ½ teaspoon Garlic powder - For sauce
  • 1 teaspoon Pickle juice - Secret flavor trick
  • Carrot sticks - For serving
  • Celery sticks - For serving
  • Ranch or blue cheese dressing - For dipping

Equipment

  • 1 Large baking sheet (rimmed) (Prevents sauce spillage)
  • 1 Parchment paper (Keeps coating from sticking)
  • 1 Large mixing bowl (For batter)
  • 1 Medium mixing bowl (For tossing with sauce)
  • 1 Whisk (To mix batter smoothly)
  • 1 Small saucepan (For buffalo sauce)

Method
 

  1. Preheat oven to 450°F, line baking sheet, prep cauliflower (cut & dry)

  2. Whisk flour, spices, and milk into smooth batter
  3. Coat florets in batter, arrange on baking sheet
  4. Bake 15–18 min, make buffalo sauce, toss florets in sauce, bake another 10–12 min
