  • 2 cups Bisquick baking mix - Or gluten-free version
  • 1 lb Breakfast sausage - Jimmy Dean or similar
  • 2 cups Sharp cheddar cheese - Grated
  • 2 Large eggs - Room temperature
  • ½ teaspoon Garlic powder - Optional
  • ½ teaspoon Black pepper - Optional
  • 1 cup Ritz crackers - Crushed, for topping
  • 2 tablespoon Butter - Melted, for topping
  • 2 tablespoon Parmesan cheese - Grated, for topping
  • 1 teaspoon Dried parsley - For topping

Equipment

  • 1 Large mixing bowl (For combining sausage, cheese, Bisquick)
  • 2 Baking sheets (Line with parchment)
  • 1 Cookie scoop (Optional, for even sizing)
  • 1 roll Parchment paper (Keeps bottoms from sticking)

Method
 

  1. Preheat oven to 375°F (190°C) and line baking sheets with parchment paper.
  2. In a large bowl, break up sausage and mix with shredded cheddar cheese. Gradually add Bisquick, garlic powder, and black pepper until mixture holds together and is slightly sticky.

  3. (Optional but recommended) Cover bowl and refrigerate mixture for 1 hour to let flavors meld and firm up for easier shaping.
  4. Roll mixture into walnut-sized balls (use a cookie scoop if available). Place 2 inches apart on prepared baking sheets. Optionally roll in crushed Ritz topping or brush with egg wash.

  5. Bake 18–22 minutes until golden brown and cooked through. Cool for 3–5 minutes before serving warm.
