- In a small bowl, mix smoked paprika, garlic powder, salt, and pepper. Season both sides of the chicken breast with the spice mixture. prep
- Heat a skillet over medium heat. Add the cooking oil and swirl to coat. Add the seasoned chicken breast and cook for 5-7 minutes on each side until fully cooked (165ºF internal temperature). Transfer the chicken to a cutting board. prep
- Let the chicken rest for 5 minutes. After resting, chop the chicken into small pieces. Add ¼ cup BBQ sauce to the chopped chicken and stir to coat. prep
- Preheat the oven to 450ºF. Place the prepared pizza dough on a pizza pan. Spread ½ cup BBQ sauce over the surface of the dough. assemble
- Add the shredded Monterey jack cheese, BBQ chicken, sliced jalapeños, and red onion on top of the pizza. assemble
- Bake the pizza for 10-12 minutes, or until the crust is golden and cheese is melted. Slice into 8 pieces and serve. bake
