Ingredients
  

  • 3–4 whole Overripe bananas - Mashed until mostly smooth
  • 1 ½ cups All-purpose flour - Can swap with whole wheat or gluten-free
  • ½ cup Granulated sugar - Can use coconut sugar
  • ½ cup Brown sugar - Light or dark; can swap with maple syrup
  • 2 large Eggs - Room temperature; or use flax egg substitute
  • ½ cup Unsalted butter - Softened or melted and cooled
  • 1 teaspoon Pure vanilla extract
  • 1 teaspoon Baking soda
  • ½ teaspoon Salt
  • ½ cup Sour cream - Adds extra moisture
  • ½ cup Walnuts or pecans - Chopped
  • ½ cup Chocolate chips - Semi-sweet or dark
  • 1 teaspoon Ground cinnamon - Warm spice flavor

Method
 

  1. Preheat oven to 350°F (175°C). Grease a 9x5 inch loaf pan. Mash bananas until mostly smooth. Let butter soften or melt and cool slightly.

  2. In a large bowl, cream butter with granulated and brown sugar. Beat in eggs one at a time, then stir in mashed bananas and vanilla.

  3. In a separate bowl, whisk together flour, baking soda, and salt. Gently fold dry ingredients into wet mixture until just combined. Add nuts, chocolate chips, or cinnamon if desired.
  4. Pour batter into prepared pan. Bake for 60–65 minutes, or until a toothpick inserted in the center comes out clean.
  5. Cool in pan for 10 minutes, then transfer to a wire rack. Wrap tightly and store at room temperature for 3–4 days, or freeze for up to 3 months.
